Sikaurum “Ruby” »» A intensely
fruity oil with a spicy flavor pressed from the Coratina
variety of olive.
The Ruby is
produced with the
Coratina olives only coming from the farm Le
Timpe by Ricciardo Brothers, situated on the hills of
Ficarra. The olive tree is mainly cultivated in southern
Italy but few can be found in Sicily and most are
cultivated in the Province of Messina and Catania.
The oil is
intensely fruity with some spiciness that is very
appreciated by olive oil aficionados. Its organolephtic
qualities and its nourishing and dietetic features make
it suitable for raw use and for many kind of cooking
especially on grills and roast. It is irreplaceable to
prepare typical specialties of the Mediterranean diet.
It has a linoleic acid (omega 6 fatty
acid) content of only 7%, and the linolenic acid
(omega 3 fatty acid) contents is about 0.7% but it has
very high of polyphenols (antioxidant) that make this
oil one of the most wanted. This oil also has a very
high monounsaturated fats 79% (good fats) which makes it
a healthier choice.
